cauliflower bites

These cauliflower bites really change the game with vegetarian appetizers. You can eat them as they are, or you can dip them in your favorite condiment. I also dipped them in ranch and barbecue sauce and it was perfect!
The best thing about these is they really are so easy to make, and you probably have all the ingredients to make it since it really doesn’t take much!

Cauliflower is one of those vegetables that are not seen as highly nutritious, but I’m here to tell you they really are!! Some highlights of cauliflower is that it’s high in fiber, potassium, magnesium, vitamin C, and vitamin B6.

Some tips and tricks for making this recipe:

  1. My favorite bites are the smaller pieces. Try to cut the florets into smaller pieces.

  2. If the oil becomes dark after the first batch, throw out and get fresh oil

ingredients:

1 head of cauliflower

3 eggs

1 cup of flour

1/2 tsp salt

1/2 tsp pepper

1/2 tsp garlic powder

1/2 tsp onion powder

optional: 1 tsp Italian spices

oil

instructions:

chop up cauliflower into small florets.

in a bowl, combine the flour, salt, pepper, garlic powder, onion powder, and Italian spices. mix together well.

in a separate bowl, whisk the eggs until well mixed.

dip each cauliflower floret into the eggs, then into the bowl with the flour mixture. dip back into the eggs, and back into the flour mixture, then set aside. complete this step until all florets are battered.

heat 3 tbsp of oil in a pan over medium heat (note: you may need more or less oil depending on pan size. just do a thin layer across the bottom of the pan, you can always add more later). add in the battered cauliflower (you may need to do this in batches). once browned, flip. continue to flip until every side is lightly browned.

serve immediately with your favorite condiments
