Easy White Sauce Pasta

this dish goes well with some sourdough bread and extra veggies :) 

tips for this recipe:

  1. cooking the pasta in the veggie broth adds a nice complexity to the dish. it adds in flavor so you don’t have to go crazy with the seasonings. I used Pacific brand veggie broth (it’s my current favorite!)

  2. if you want this to be vegetarian, use vegetarian parmesan cheese!

  3. you can absolutely replace the oil with butter.

  4. instead of spinach, you can use other veggies like asparagus or peas

  5. you can use heavy cream instead of half and half if you want

ingredients:

1/2 yellow onion, diced

1 tbsp garlic

oil

butter, optional

1 tsp flour

3 cups veggie broth

8 oz of pasta

1/3 cup half and half

1 1/2 cups of spinach

salt, to preference

pepper, to preference

1/2 tsp onion powder

1/2 tsp garlic powder

parmesan cheese, to preference

instructions:

in a pan, add the oil and onion and sauté on low/medium heat until translucent, about 7 min. add in the garlic and sauté another minute or two. Add in another tbsp of oil or butter and the flour. mix together for about 2 minutes to cook the flour.

add in the veggie broth and pasta and increase heat to medium/high. once pasta is mostly cooked, lower heat to low/med and add in half and half.

add spinach, salt, pepper, onion powder, garlic powder. let cook together until the pasta is soft and the spinach is wilted.

add parmesan cheese and serve warm.
