Greek Yogurt Brownies
these greek yogurt brownies seriously are so good! they’re kind of like a flourless cake…but with flour. similar vibes!!
and no, making brownies with a little bit of greek yogurt in them is not going to immediately make it so they are the healthiest thing in the world. if you ate these for breakfast, you probably would not have sustainable energy to make it through the day. but that doesn’t mean that it isn’t a fun way to add some extra nutrients to your favorite foods, and use up any greek yogurt you may have lying around!
options:
add extra chocolate chips to the top of the brownies prior to baking. I add probably an extra 1/3 cup to the top!
every oven is just slightly different, and you don’t want to over cook your brownies. to avoid overcooking, you can just start testing the brownies around 20 minutes
if you pull the brownies out of the oven and they jiggle, just go ahead and put them right back in the oven.
using room temp ingredients is always a good baking tip, but completely necessary.
these keep on the counter, with a top/wrapped tightly, for 5 days.

okay, we all know that brownies aren’t going to be the most nutritious thing you eat in a day. butttt, that doesn’t mean there aren’t some things that are beneficial about them!
these brownies use dark cocoa powder, which has some evidence to show that it’s beneficial for our cardiovascular health. it’s been shown to reduce blood pressure in some people AND can increase the nitric acid in our circulatory system (which can improve circulation, the same reason athletes are encouraged to drink chocolate milk!).
the addition of greek yogurt in this recipe also adds in some protein (not a ton per serving, but some). that means that it will keep you satisfied after eating it, which can help you limit the amount you eat in one sitting.
Ingredients:
1/2 cup chocolate chips
1/2 cup milk of choice
1/2 cup packed brown sugar
1 cup Greek yogurt
2 eggs
2 tsp vanilla
1/2 cup all purpose flour
1/2 cup cocoa powder
1/2 tsp baking powder
1/2 tsp salt
Instructions:
preheat oven to 350ºF
in a large bowl, combine the chocolate chips and milk of choice. microwave for one minute. stir the chocolate milk mixture until the chocolate chips are mostly melted.
into the same bowl, add in the brown sugar, Greek yogurt, and eggs. stir well. add in the flour, cocoa powder, baking powder, and salt.
pour batter into a greased 9x9 pan and bake for about 25 minutes. check the brownies around 22 minutes by poking the middle of the brownies with a toothpick. if the toothpick comes out clean, they’re done! if the toothpick comes out a little cake-y, take it out! if the toothpick comes out with batter, cook longer.
