mushroom stroganoff
there are a lot of meals out there that are based around meat that a lot of vegans/vegetarians feel like they “can’t” eat. but, for the most part, I don’t think there’s been anything that I used to eat that I can’t make now, just vegetarian. and that includes stroganoff. this was such a reoccurring meal for us growing up. my mom made this at least once a month it seems like, so I wanted to make it again just without the meat in it.
mushrooms are so underrated!! they are so so versatile, and there are so many different kinds of them! some give a meaty texture, some are earthy, some are disgusting (looking at you, canned button mushrooms). if you don’t like mushrooms, I highly recommend giving some different varieties a try. you can mess around with different seasonings too!
yes, this recipe calls for white wine. the amount of alcohol that is left over isn’t an exact science: some research says small amounts (10%) is still remaining in the dish, while other studies show upwards of 40-80% remaining. just a heads up for those who didn’t know!
this recipe also doesn’t have any veggies in it, so these types of meals I always add some sort of veggie to the side! broccoli is one of my favorites, but if i’m low on fresh veggies a can of green beans is always a good idea too.
ingredients:
1/2 yellow onion, diced
1 cup shiitake mushrooms, sliced
2 tsp steak seasoning
oil
1 tbsp butter
1 tsp flour
1/2 cup white wine
3 tbsp nutritional yeast
3 cups veggie broth
pepper
8 oz egg noodles
1/3 cup sour cream
instructions:
add oil to a pan over medium heat. add in the onion and shiitake mushrooms. let cook for about 7 minutes. add in steak seasoning and mix together.
in the same pan, add in the butter and let melt. add in the flour and mix together with the butter for about 2 min, stirring continuously. add 1 cup of white wine and let that cook off for about 5-10 minutes. add nutritional yeast, veggie broth, and pepper. once simmering, add in the egg noodles. cook until the egg noodles are soft.
remove from heat and mix in the sour cream. serve immediately with a side of veggies.
