black bean chocolate dip

I already know what you’re thinking. This sounds disgusting. I knowww it doesn’t sound the most appealing, but it’s really similar to chocolate hummus if you’ve ever had that! The texture of this is really similar to frosting, although I probably wouldn’t put this on a cake. I dipped apples in it and spread it on graham crackers and it was so delicious! When I gave it to my husband he said it tastes like brownie batter to him :)

it’s really not a necessity to turn every “fun” food into a healthy option. but the fact is, most people are not getting enough fiber in their diets. most people only get 15 grams, when the recommendation is at least 30 grams in a day for most people. this is a fun way to get in some more micronutrients like folate and b vitamins at the same time!

recipe:

ingredients:

1 can of black beans, rinsed well

1/3 cup cocoa powder

1/4 cup maple syrup

sugar to preference, 1/8 - 1/4 cup

1/4 cup peanut butter

1 tsp vanilla

pinch of salt

1 tbsp milk of choice

instructions:

in a food processor, combine all ingredients but the milk. process until smooth. add 1 tbsp of milk to thin out as needed.

serve with crackers or fruit. store in refrigerator for up to a week.

TIPS:

you have to make sure the beans are rinsed off super good or else it’ll be starchy and more bean flavored.

you can pulse in some chocolate chips for a little crunch!
