Vegetarian Swedish Meatball Sauce
This is one of those meals that I don’t think I’ve made in probably 4 years, but I absolutely love! I love how easy this is to throw together, especially if you already have some “meatballs” on hand. The “meatballs” I used are Walnut Cheddar Balls from the Moosewood Restaurant Table cookbook.
One thing about nutrition is that people think it has to be super complicated. It really doesn’t. At the most basic levels of nutrition, we want to balance our plate with carbohydrates (about 50-60% of the food we eat), protein (about 20-30%), and fat (about 20%). As you can see with this meal, the gravy for the meatballs and the egg noodles are carbohydrate sources, the walnut balls and the egg noodles are protein sources, and the gravy has a good amount of fat in it too. So we didn’t even have to do anything extra to make the meal more balanced; it’s just naturally a good dinner idea!
Vegetarian Swedish Meatball Sauce Recipe:
ingredients:
1 tbsp butter
1 tbsp flour
1 cup veggie broth
1/2 cup half n half
3 tbsp soy sauce
pepper
rosemary
egg noodles
instructions:
Melt butter in a pot over medium heat. Add in flour and whisk until all chunks have broken up. Add in veggie broth, half n half, soy sauce, pepper, and rosemary and whisk until it’s thickened.
Cook egg noodles according to instructions on box/bag.
