Chickpea Patties

The other day I ordered a sandwich with UberEats and it was literally the worst thing I’ve ever had. The bread was hard and stale, the mayonnaise sauce they used had no flavor, and the part that made it a chickpea sandwich was just canned chickpeas thrown on the top. If I were home, I would have just made something but unfortunately I just had to waste $20 on that sandwich and throw it away :(

I like making these types of meals at home because 1. I know I’m not going to make something that’s so horrible I have to throw it away, and 2. I can adjust the portions how I want to to make sure there’s extra…kind of like a mini meal prep.

Chickpeas are a favorite of mine because they’re super versatile! You can add them to sweet dishes, you can add them to savory, they can be the main focus point or they can be a side. Chickpeas have so many good nutrients like fiber (for gut health!), protein, calcium, B vitamins, magnesium, and more!

Here’s the recipe for my favorite Chickpea Patties:

ingredients:

half of one small onion

salt

pepper

steak seasoning

garlic

1 can (15 oz) of chickpeas

smoked paprika

coriander

2 tbsp flour

oil of your choice

instructions:

Dice up half of an onion and sauté it in a pan on medium heat with salt, pepper, and steak seasoning for about 6 minutes. Add in garlic once the onions have become translucent and cook for another minute.

In a food processor, add one can of chickpeas, the onion mixture, smoked paprika, salt, pepper, and a pinch of coriander. Pulse that until it’s combined, leaving some chunks. Add in 2 tbsp of flour and pulse until combined.

For the patties, roll the mixture into balls and press down on some parchment paper. If you want larger patties, use more of the chickpea mixture. If you want smaller patties, use less of the chickpea mixture.

In a pan heat up 1 tsp of oil over medium heat. Add in the patty and cook for 4 minutes on each side, or until crispy.

Eat how it is with a dip of your choosing, or make into a sandwich.
